Thanksgiving Day Menu...a work in progess

Title: Baked Turkey

1 ea Turkey, any weight
1/2 c Butter, in slices
1/2 c Oil
4 ea Cloves garlic pressed
1 ts Allspice
1 ts Seasoning salt

Preheat oven to 400 degrees.

Place turkey in roasting pan. Lift skin above body cavity and insert butter slices. Rub oil all over skin on body of bird. Sprinkle with seasonings.

Cover the top of the turkey with aluminum foil. Wrap the overlapping foil around the top of the roasting pan. Cover with lid also, if available.

Reduce heat to 350 degrees and figure amount of cooking time at 20 minutes per pound.

Remove foil during last 20 minutes of cooking to allow skin to brown.

Whipped Sweet Potato Bake

Whipped Sweet Potato Bake

What You Need
3 cans (15 oz. each) sweet potatoes, drained
1/4 cup (1/2 stick) butter or margarine, melted
1 tsp. ground cinnamon
1 tsp. ground ginger
1/4 tsp. ground nutmeg
3 cups JET-PUFFED Miniature Marshmallows
Make It

HEAT oven to 350°F. Beat sweet potatoes, butter, cinnamon, ginger and nutmeg with mixer until blended.

SPOON into lightly greased 1-1/2-qt. casserole dish; top with marshmallows.

BAKE 15 to 20 min. or until mixture is heated through and marshmallows are lightly browned.

Green Bean Casserole

Ingredients:
1 can (10 3/4 ounces) CAMPBELL'S® Cream of Mushroom Soup
3/4 cup milk
1/8 teaspoon black pepper
2 packages (9 ounces each) frozen cut green beans, thawed*
1 1/3 cups French's® French Fried Onions, divided


Directions:
1. Combine soup, milk and pepper in a 1 1/2 -quart baking dish; stir until blended. Stir in beans and 2/3 cup French Fried Onions.
2. Bake at 350°F for 30 minutes or until hot. Stir. Sprinkle with remaining 2/3 cup onions. Bake 5 minutes or until onions are golden.

*Or 2 cans (14 1/2 ounces each) cut green beans, drained.

CAULIFLOWER & CHEESE BAKE
1 head cauliflower
3 tbsp. olive oil
1 lg. onion, sliced thin
Salt & pepper to taste
1/3 c. fine bread crumbs
1 (8 oz.) pkg. mozzarella cheese, grated
1. Cut off cauliflower flowerettes.

2. Steam until tender (approximately 20 minutes).

3. Meanwhile saute onions in oil until golden.

4. Pour in crumbs. Stir.

5. Layer cauliflower, cheese and onions in a baking dish.

6. Season with salt and pepper.

7. Sprinkle remaining cheese on top.

8. Place under broiler until cheese melts and top turns light brown.

Pecan Pie

Ingredients:
  • 3 large eggs
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 2 Tbsp melted butter
  • 1 cup light corn syrup
  • 1 1/4 cup pecans
  • 1 tsp Vanilla
  • 1 unbaked 9" pie shell
Preheat oven to 375º F, beat eggs, vanilla, sugar & salt. Add butter & syrup & mix in pecans. Bake 40-45 minutes in pie shell.
